For the home brewer, Brazil is the perfect "forgiving" bean. If your grind size is slightly off or your water temperature isn't pinpoint accurate, a Brazilian bean is much more likely to still taste great than a finicky light-roast heirloom variety.

The Limini Roasting Process: Bringing Out the Best

At Limini Coffee, we don't just "cook" the beans; we lovingly develop them.

Our commitment to quality starts with sourcing. We look for 100% Arabica beans, often from the Minas Gerais region, where the conditions are just right for developing those deep chocolate notes. We prefer beans that have been processed using the "Natural" or "Pulped Natural" method.

In the Natural process, the coffee cherry is left to dry with the bean still inside. This allows the sugars from the fruit to soak into the bean, resulting in a much sweeter, fuller-bodied cup. It’s a bit more work for the farmers, but we believe the result is worth every second.

When the beans arrive at our roastery, we use a medium roast profile. We want to toast them enough to bring out the oils and caramelise the sugars, but not so much that we lose the unique characteristics of the origin. It’s a delicate balance, but it’s one we’ve spent years perfecting.

Technical Tips for the Perfect Brazilian Brew

We aren't just here to sell you beans; we want to make sure you’re getting the most out of them. Whether you’re using a high-end La Spaziale machine or a simple V60 at home, here are a few pointers.

For Espresso:

  • Temperature: We recommend a water temperature between 198 °F and 203 °F (92 ºC to 95 ºC). If it's too cool, you might miss out on that lovely sweetness; too hot, and you risk a bitter aftertaste.
  • Pressure: Aim for the standard 9 BAR of pressure.
  • Ratio: A classic 1:2 ratio works wonders. If you’re using 18g of ground coffee, aim for 36g of liquid espresso in about 27 to 30 seconds. This should give you a thick, syrupy shot with a heavy crema.

For Filter/Cafetière:

  • Ratio: Try 60g of coffee per litre of water.
  • Water: Always use filtered water if you can. The minerals in tap water can sometimes mask the delicate nutty notes we’ve worked so hard to roast into the bean.
  • Bloom: Don't forget to let the coffee "bloom" for 30 seconds by adding a small amount of water first. This releases trapped CO2 and allows for a more even extraction.
